Portobello Mushroom Brochette: Portobello Mushrooms grilled and tossed with basil & tomatoes in a light marinade flavored with garlic and herbs. Our next big event that week was the NFL Gospel concert that featured such performing artists as Mary Mary and the NFL gospel Choir. Catering by Saffron’s was chosen to cater dinner for the performers and there staff before the show. Much to our delight our fare was received with such comments as” We travel and are on the road so much its great to have a hot meal but this is truly the best food we have had”; and “Can I have another plate please”. Chef Jackie’s Famous Jerk Chicken and Island fish with Saffron rice had everyone cleaning their plates and looking for more.
