What’s New?: 
Catering by Saffron’s takes it to the beach.   In early July we celebrated our 3 year anniversary by having a picnic by the beach. Chef Jackie served up her Jerk chicken, Caribbean coleslaw and other familiar fav’s to our staff and customers alike who came out to help us commemorate this very happy event.
 
 
The faces behind the scenes: Our new website is up and looks terrific. We have many new additions and one of the most noted is our new video, where you get a personal message from Chef Jackie and her daughter, co owner Safrone. . We invite you go to www.saffronscuisine.com and check it out and let us know what you think.
 

Side notes:
We will be continuing our Wedding Wednesday’s during the month of July and August. Chef Jackie offers a free tasting to brides once a month on Wednesdays. She creates a specialized menu just for this event to help with the choice of food when planning a wedding. If you would like to attend, please visit our website at www.saffronscuisine.com and make your reservation – spots fill up fast so visit us today. Our next event is Wednesday July 22nd from 5:30 pm to 7pm.

 Summer Recipe:
During the summer with the heat and humidity that Florida is known for, most folks are looking for some lighter fare. At Catering by Saffron’s Chef Jackie is always coming up with new and exciting additions to our menu by offering seasonally inspired items. Her newest creation is becoming a fast customer favorite- a cool Greek inspired watermelon salad. We have included the recipe for those who would like to try it at home. Of course, it will be missing our secret ingredient- Chef Jackie’s love. Enjoy!
Watermelon Salad
 
  • Large Watermelon – cubed into medium size – save the shell** if you hollow it out it can double as a lovely, environmentally friendly serving dish.
  • 1 Lime juiced
  •  1 small red onion sliced
  • 1 package feta cheese
  • ½ bunch chopped Cilantro
  • 1 English cucumber cubed
  • Black pepper
 
Toss the red onion in the lime juice together and marinate for 10 min. While that’s going – toss remainder of ingredients together crumbling the feta over the top – then add red onion marinade to salad and viola – a lovely light salad that looks great and tastes even better. This salad can be used as a starter or as an alternative for vegetarians. We also offer another variation of this refreshing salad made with mint and lime. Conch Salad

Well I am like a kid in a candy shop when someone requests something I have never made before, so when I was asked to make Conch Salad with fresh Conch from the Bahamas I acted like i had been making Conch Salad all my life. Today with the Internet nothing is a secret anymore so I read several of the recipes for Conch salad and came up with my own, the tip that I got that I think really makes the difference is to defrost the conch in fresh lime juice another suggested adding a splash of sour orange for a deeper flavor, I used red and yellow peppers instead of the green that all the menus called for, some chopped tomatoes and some cilantro and I had a beautiful salad, I was so happy when I got a call to say that mu conch salad was one of the best he had this from a man who has had real Bahamian  Conch Salad, could not have been happier if I had won the Lottery

Good Bye Jim

Jim Bryson, passed away last Thursday, what a tragedy maybe the world did not stop and gasp as it did with Michael Jackson, but it changed my world. Jim and I have been friends for years we taught Sunday School at First Unity Church together for over five years often cooking in the church kitchen together to feed the congregation for fund raisers and fun times, he joined me in my kitchen two years ago and with his loud voice and boisterous manner he often got on my nerves, but he was my good friend and I loved him.

Jim often brought his son Evan Minnnie me I called him he looked so much like Jim and I cannot bear to think what Evan will do without Jim.
